Almost every guide to storing wine warns you about mould from too much humidity. That advice is written for cellars — and it has the home problem exactly backwards. Wine wants about 60–70% relative humidity, but a heated home in winter drops to 10–30%. For most people storing bottles in a closet, rack, or spare room, the real danger isn’t too much moisture — it’s far too little, which slowly dries the cork until it shrinks and lets air in. Ask ten wine authorities and you’ll get a band, not a single figure. Wine Spectator puts the ideal around 70% and calls 50–80% safe; wineries and cellar specialists more often cite 60% as the target with 50–70% acceptable. Put those together and the working answer is simple: aim for roughly 60–70% relative humidity, and anywhere from 50% to 70% is fine as long as it’s stable.

Two honest notes before you chase a decimal. First, these are consensus targets, not laboratory thresholds — they vary by source, and stability matters more than hitting an exact number. Second, this is about long-term storage, where a cork sits for years. A bottle you’ll open next month doesn’t care about humidity at all. Humidity is a question for wine you’re keeping, not wine you’re drinking.

Why a dried cork is the real home risk

A natural cork is hygroscopic: it constantly trades moisture with the air around it. Keep the air near 60–70% and the cork stays plump and airtight. Let the air get too dry and the exposed end of the cork loses moisture, shrinks, and loses its grip on the glass — and once the seal weakens, oxygen creeps in. That slow oxygen leak is what quietly ages a wine past its best, dulls the fruit, and in the worst case lets wine seep up the cork and out. Here is why this matters more than the mould warnings you usually read. Most people don’t own a purpose-built cellar — they keep wine in a kitchen rack, a closet, or a spare room. Those spaces track the humidity of a heated home, which in winter sits at 10–30% — less than half of what a cork needs. So for the typical home, the failure mode isn’t a mouldy label from damp; it’s a cork that hardens over a season or two of dry indoor air. If you keep bottles for the long haul and your home runs dry, that’s the risk worth fixing.

When too much humidity is the problem

The mould warnings aren’t wrong — they’re just for a different setting. If you store wine in a basement, an underground cellar, or anywhere in a humid climate, the risk flips. Above about 75% humidity, mould starts growing on corks, labels and wooden racks. The good news is that it rarely reaches the wine, which is sealed; the bad news is that it can ruin labels and leave a musty smell that’s hard to shift.

So the two ends of the scale fail in different places: too dry ruins the wine through the cork; too humid ruins the label and the room but usually spares the wine. Knowing which risk you actually face — dry heated room versus damp basement — tells you whether you need to add moisture or remove it. Most people storing wine indoors in a cold-winter climate need to add it.

Temperature matters just as much

Humidity gets the headlines, but temperature does at least as much work. The long-standing target is a steady 55°F (about 13°C), with anything from roughly 45–65°F acceptable if it doesn’t swing. UC Davis’s enology researchers have shown that warmer storage measurably changes a wine’s aroma and colour over time, and that keeping it cool is what slows aging down.

The single worst thing you can do is let temperature swing — a rack above the fridge or next to a radiator cooks and cools the wine on a daily cycle, which is harder on it than a steady temperature a few degrees off ideal. Humidity and temperature work together: a cool, stable spot held near 60–70% humidity is the whole game.

How to hold the right humidity where you store wine

Match the fix to how you actually keep your bottles:

  • A few bottles you’ll drink within a year: don’t overthink it. Keep them cool, dark and on their side so the wine touches the cork, and move on. Humidity isn’t worth managing for wine in rotation.
  • A wine fridge or cooler: most already manage humidity reasonably, and it’s the right tool for a serious collection in a small space. If yours runs dry, a cup of water or a damp sponge inside can nudge it up.
  • A closet, rack, or spare room in a dry, heated home: this is where a room humidifier earns its place — it’s the only practical way to lift a whole room from 25% up to 55–65% and hold it there through the heating season. Put a hygrometer next to the bottles, aim for the middle of the range, and don’t overshoot.

Two cautions. First, don’t over-humidify — pushing a room past 70% to be “safe” just trades a dry-cork problem for mould on your labels and walls, the same failure we cover in do humidifiers cause mould.
